Quick and Easy Pear Cheesecake Parfaits

Do you need a last minute dessert?  I wanted to make a no-bake cheese cake, but I had no graham crackers in the house for the crust and in these times of Covid19, running out for a box of graham crackers is just not doable!! 

As I looked through my cupboards to see what they offered, an Italian proverb came to mi nd al contadino non far saper e quant’è buono il formaggio con le pere” - "never tell the farmer how good cheese is served with pears". Well, if you know me.. you know that curiosity is one of my traits, so I did a little bit of research. The oldest reference to this proverb seems to date back to 13th century France, in a popular proverb of the day :  “Oncques Deus ne fist tel mariage comme de poire et de fromage” - "There was never a more successful marriage made in heaven that that between pears and cheese"  (http://www.formaggio.it/senza-categoria/cosa-ce-dietro-il-proverbio-al-contadino-non-far-sapere-quante-buono-il-formaggio-con-le-pere/)

The result of all this was my dessert today and you can make it, too ... in about 15 minutes!

Ingredients for 2 servings
3 canned pear halves
1/3 c whipping cream
2 T of the syrup/juice the pears are packed in
100 g (about 3 oz) of cream cheese
1-3 T powdered sugar, depending on how sweet you want your parfait
1/4 t vanilla extract
mini chocolate chips (if you don't have chocolate chips you can use cocoa)

In a small bowl, whip the cream til soft peaks form; set aside.
In another bowl, whip the cream cheese with the pear juice and powdered sugar (I used 1 1/2 T of powdered sugar and a 1/4 t of vanilla extract til soft peaks form.
Add the whipped cream to the cream cheese mixture and beat on high for about another minute.
Cut one of the pear halves into 4 slices

I served my parfaits in glass sundae dishes, but you could use long stemmed wine glasses or parfait glasses.
Place a pear half in the bottom of the dish/glass, add about 1/4 of the creamed mixture, sprinkle with a teaspoon of chocolate shops, add another 1/4 of the creamed mixture, top with 2 slices of pear and sprinkle with a teaspoon of chocolate chips. (If you don't have chocolate chips use cocoa to layer and sprinkle on top)

Repeat for the second parfait.

That's it! You can eat them immediately or refrigerate for later!

PS If you want a no-bake pear cheesecake. Make a graham cracker or cookie crust using graham cracker or cookie crumbs and melted butter. Slice the pears and arrange on the crust. Spoon in the cheese filling, sprinkle with chocolate chips and chill.
